One-day brownies

Heatwave, schmeatwave: life must go on, rooms must be painted, brownies must be made.

one medium zucchini
1 cup – 1.5 cups sugar (depending on taste)
0.5 cup oil
1 teaspoon vanilla
2 cups flour
0.3 cup cocoa powder
1 teaspoon baking soda
0.5 teaspoon salt

Grate the zucchini and mix in the sugar, oil, and vanilla. Wait 5 or 10 minutes – this is crucial, because it allows the moisture to come out, so you can mix in all the dry ingredients. Mix in the rest of the ingredients. Bake in an ungreased, uncovered pan for 30 minutes in a medium-temperature oven.

I’ve made them twice in the last week… they never last longer than one day 🙂

    I’ve always been hesitant to try these. I may have to give it ago. . .as soon as the heat breaks.

    If it weren’t already over 30 in the AM, I would give it a go. It always feel like it heats up the house for hours
